BEST NEW CHEF Josef Centeno After kitchen-hopping around L.A. for nearly a decade, Josef Centeno wowed us with a global tour of bold, beer-friendly avors at the minuscule Lazy Ox Canteen in Little Tokyo. But when he opened Bäco Mercat, a hip, funky space in downtown’s Old Bank District last winter, we knew he’d found his home. It’s apparent with every bite of pork belly and sip of housemade “shrub” you take; the signature bäco, a sort of stu ed atbread-taco hybrid, is just the beginning. 408 S.
