Mads Refslund After co-founding Copenhagen’s Noma, widely considered one of the world’s fi nest restaurants, and helming the well-regarded but now-closed MR, Mads Refslund started cooking at Acme (9 Great Jones St., 212.203.2121) this year, and in short order turned a vacant space into a destination for foodies, fashionistas and foragers alike.
