Agent of Taste When Jennifer Nguyen took over at Zentan last year, she arrived with an impressive culinary pedigree—including stints at award-winning restaurants like chef Masaharu Morimoto’s Morimoto and Thomas Keller’s Bouchon. Nguyen also spent time at San Francisco’s Ozumo, where kushiyaki and sushi are as sacred as the Golden Gate Bridge. Now she’s showing off what she’s learned, especially with dishes like the 007. It’s a maki with hamchi, crispy shallot, avocado, cilantro, yuzu, tobiko and miso yolk. Nguyen’s fl ourish with the yolk: She freezes it for 24 hours instead of cooking it.
